It is packed full of Vitamin A, C, D, B6 and so much more. Sweet potatoes help charge your body up and boost your immune system. Today I have the white sweet yam and sweet potato to give us a colorful dish. Sweet potato also contains iron and women need more iron than we care to admit. What better way to kick off your day than with Sweet potatoes and eggs (protein.) This is probably one of the simplest dishes you can make for you or for your family in the morning. On that note, let’s get cooking

Ingredients

  • 1 large sweet white yam
  • 1 large sweet potato
  • 2 eggs (boil for 4-5 mins)
  • 1 small red onion (sliced)
  • 3 cups chicken or vegetable stock
  • 1 cupsof water
  • 4 tbsp. groundnut oil (or your choice of oil)
  • 3/4 tsp. salt
  • 1/8 tsp. black pepper
  • 1/8 tsp. curry
  • ½ lemon
  • 1/8 tsp. of paprika
  • Handful parsley

Instructions

  • Dice your potatoes and put in water with the lemon. The lemon keeps it from browning.
  • In a saucepan, add your groundnut oil at low heat. Add your sliced onions and stir.
  • Add chicken broth, spices, diced potato and yam. Cover and cook for 15-20 minutes or until soft. Add parsley 10 minutes into the cooking. Boil eggs with 4-5 minutes left of cooking time.
  • Serve on a plate, slice hard-boiled egg, garnish with paprika and green onions.
